Have you been to the Golden Corral? How was it?

Recently my site has been plagued by hackers. Tired of dealing with it,
I decided to call in ‘the big guns’ namely JC of J.C. Woltz Technology
Consulting. JC is a young man I have known for many years with a lot of
experience. He has decided to go it on his own and opened his own
business. Although his primary focus on the needs of businesses like
networking, servers, firewalls, and spam filtering, his is open to
repair and virus cleaning. He is not only great with windows but is a

No, I’m not talking about making choices in our lives. I am talking about meat. Only a couple years ago when you bought meat, especially steaks the default grade of beef was “choice”. Now if you buy a steak you are probably getting “select”. The USDA grades beef in these categories:

  1. Prime
  2. Choice
  3. Select
  4. Standard
  5. Commercial
  6. Utility
  7. Cutter
  8. Canner

There is not as much marbling of fat in the select steaks and it is less flavorful and tougher.  I see people snatching up the cheap, but tough steaks and have to wonder if they realize that these are going to be tough and for the most part not very tasty.

I’m not much of a red meat eater, but if you are watch that grade!

We were out of service for a while. Looks like we were hacked again. It took a while for a local service to fix my account. I’ll tell you about the local service later. Anyway back up and running.

The current administration is currently seeking to roll back the Bush tax rollback on the rich. Sure, it’s a popular idea. Stick it to the the rich! It’s an integral part of Obama’s redistribution of wealth agenda.

However….

These are the people that are capable of capital formation. These are the people that start small businesses and provide people with employment. Take away the ability to accumulate capital and the result will be less rich people opening businesses and employing people.

I am not a “cow hugger”. I am not one of the kooks that think that cows and chickens need to be “liberated”. Frankly, I’ve never heard of flocks of wild chickens.

Having said that I would like to say that the chickens, and for that matter the eggs, that my grandmother raised were a lot tastier than the ones that you buy at the grocery store. The chickens that my grandmother raised were free to roam the chicken yard all day long eating their regular commercial food. They also ate bugs, grass, and table scraps that we gave them. Their meat was more “chickeny” and the yolks in the eggs were a deep orange and really tasty. Now we get chickens that are bred strictly to provide the best yield of tasteless meat and the best egg count. They are cheap, but tasteless.

I believe that the same can be said of veggies. Varieties of veggies have been developed that resist disease and have earlier and larger yields – all at the expense of taste as well as nutrition. Heirloom tomatoes have more flavor than hybrid tomatoes?

In recent years there has been a rapid expansion organic foods available at the grocery store, but frankly I haven’t found any difference in taste between the organic and non-organic veggies.

It would seem to me that there would be a market for tastier meats and vegetables. Could this be an opportunity for owners of small farms?

I do have one question though! Home Cooked meals? Does that mean another “Lancaster cuisine” restaurant?

Many home owner’s insurance policies have automatic escalators in them where the insured value of your house increases every year supposedly to keep up with the increasing value of your home.  If you haven’t checked it a while now might be the time to do so.  You may find that the coverage of your house way outstrips the market value of your home.  You might want your insurance agent to reset the value of your home and lower your premiums by a lot.

There is an article in today’s LEG discussing the 2008 change in graduation rates.  They mention the four schools that increased the graduation rate.  NOT mentioned is Lancaster Schoold District’s drop from a graduation rate in 2008 of 94.0% to a rate of 90.8%  – a 3.2% drop in a single year! Stunning, just stunning!
